Sweet Potato, Kale and Shrimp Skillet

These sweet potatoes, kale and shrimps need only 4 ingredients, which are gluten-free, low-carb, and easy to make!

Ingredients

  •  2 tbsp extra-virgin olive oil or Ghee.
  •  ½ cup onion — diced
  •  A pinch of crushed red pepper — to taste
  •  2 garlic cloves — minced
  •  2 cups sweet potatoes — diced
  •  2 cups fresh shrimp
  •  3 cups trimmed and coarsely chopped kale leaves
  •  Salt and ground black pepper

Instructions

  1. In a cast iron pan, add olive oil over medium heat.
  2. Add onion and ground red pepper.
  3. Cook until onions are smooth and golden.
  4. Add the garlic and cook for about 30 seconds.
  5. Add sweet potatoes and cook until soft. If necessary, add a few tablespoons of water or a quarter cup of sweet potato fumigation *.
  6. Add shrimp and cook for 2-3 minutes or turn pink.
  7. Reduce heat and add turnips, stirring until wilted.
  8. Season with salt and pepper.
