Sweet Potato, Kale and Shrimp Skillet

These sweet potatoes, kale and shrimps need only 4 ingredients, which are gluten-free, low-carb, and easy to make!
Ingredients
- 2 tbsp extra-virgin olive oil or Ghee.
- ½ cup onion — diced
- A pinch of crushed red pepper — to taste
- 2 garlic cloves — minced
- 2 cups sweet potatoes — diced
- 2 cups fresh shrimp
- 3 cups trimmed and coarsely chopped kale leaves
- Salt and ground black pepper
Instructions
- In a cast iron pan, add olive oil over medium heat.
- Add onion and ground red pepper.
- Cook until onions are smooth and golden.
- Add the garlic and cook for about 30 seconds.
- Add sweet potatoes and cook until soft. If necessary, add a few tablespoons of water or a quarter cup of sweet potato fumigation *.
- Add shrimp and cook for 2-3 minutes or turn pink.
- Reduce heat and add turnips, stirring until wilted.
- Season with salt and pepper.
