Keto Recipes To Freeze - The cheddar broccoli chedo soup is very tasty and filling so you will not miss the potato! It is an excellent low carb option for every fall meal!

ingredients

  • 2 tablespoons Butter
  • 1/ 8 Cup White Onion
  • 1/2 teaspoon Garlic, finely minced
  • 2 Cups Chicken Broth
  • Salt and Pepper, to taste
  • 1 Cup Broccoli, chopped into bite size pieces
  • 1 Tablespoon Cream Cheese
  • 1/4 Cup Heavy Whipping Cream
  • 1 Cup Cheddar Cheese; shredded
  • 2 Slices Bacon; Cooked and Crumbled (Optional)
  • 1/2 teaspoon xanthan gum (optional, for thickening)

Instructions

  1. In a large skillet, sauté onion and garlic with butter on medium heat until onions become smooth and transparent.
  2. Add the broth and broccoli to the boiling point and boil the broccoli until tender. Add salt, pepper and herbs required.
  3. Place the cream cheese in a small bowl and stir in the microwave for approximately 30 seconds until it is soft and easy to stir.
  4. Turn the heavy cream and cheese into the soup. Bring to boil.
  5. Turn off the fire and stir cheddar cheese quickly.
  6. A sensation in Zanthan gum if desired. Let it thicken.
  7. Offers warmth with bacon crumbs (optional)
