Keto Recipes To Freeze - The cheddar broccoli chedo soup is very tasty and filling so you will not miss the potato! It is an excellent low carb option for every fall meal!
ingredients
- 2 tablespoons Butter
- 1/ 8 Cup White Onion
- 1/2 teaspoon Garlic, finely minced
- 2 Cups Chicken Broth
- Salt and Pepper, to taste
- 1 Cup Broccoli, chopped into bite size pieces
- 1 Tablespoon Cream Cheese
- 1/4 Cup Heavy Whipping Cream
- 1 Cup Cheddar Cheese; shredded
- 2 Slices Bacon; Cooked and Crumbled (Optional)
- 1/2 teaspoon xanthan gum (optional, for thickening)
Instructions
- In a large skillet, sauté onion and garlic with butter on medium heat until onions become smooth and transparent.
- Add the broth and broccoli to the boiling point and boil the broccoli until tender. Add salt, pepper and herbs required.
- Place the cream cheese in a small bowl and stir in the microwave for approximately 30 seconds until it is soft and easy to stir.
- Turn the heavy cream and cheese into the soup. Bring to boil.
- Turn off the fire and stir cheddar cheese quickly.
- A sensation in Zanthan gum if desired. Let it thicken.
- Offers warmth with bacon crumbs (optional)
