Spinach Stuffed Chicken Breast

This was absolutely delicious! Simple but very flavorful. My husband and I don’t cook chicken as a standalone entree very often (usually in stir fry, pasta, etc.) but we will definitely be adding this to our favorites and making regularly.

Spinach Stuffed Chicken Breast

Ingredients

  • 4 chicken breasts approximately 2 lbs.
  • 4 oz. fresh baby spinach
  • 4 oz. cream cheese
  • 2 oz. feta cheese crumbles
  • 2 oz. shredded mozzarella cheese
  • 2 tbsp. olive oil
  • Seasoning ingredients:
  • 2 tsp. paprika
  • 1 tsp. cumin powder
  • 1 tsp. salt
  • 1/2 tsp. chili powder

Instructions

  1. Mix all ingredients of spices together and keep them.
  2. Cut the small spinach and place in the mixing bowl. Add the cream cheese, feta cheese and mozzarella. Massage the spinach with your hands, until they are well combined (must look like a thick paste).
  3. With a sharp knife, cut a pocket on the side of each chicken breast.
  4. Divide the spinach into four equal portions and place them in the chicken pockets. Using a toothpick, secure the filling inside.
  5. Season the chicken generously with a spice mixture and sprinkle with olive oil on both sides.
  6. Bake the chicken in a 400 ° F oven for 25 to 30 minutes depending on the size of your breasts.
